Fisher’s Irish Soda Bread

Don’t forget March 17 – wear your green and eat Corn Beef & Cabbage.   Below is the recipe for Irish breadSoda Bread which is the perfect compliment to your Irish Meal.

Irish Soda Bread
1/2 Cup Wheat Flour
1 Cup Bread Flour
1 1/2 cups Flour
2/3 cup Sugar
1 teaspoon Salt
1 Tablespoon Baking Soda
1/3 cup light Raisins
1 Tablespoon Caraway seeds
2 Eggs, lightly beaten
1 1/2 cups Buttermilk
2 Tablespoons melted Butter
Preheat oven to 350.  Grease loaf pan.
In mixing bowl, sift dry ingredients and add raisins and caraway seeds.
Combine eggs, buttermilk and butter to dry ingredients.  Mix lightly until dry ingredients are moistened.  Turn batter into pan and bake 1 hour.  Cool in pat for 15 minutes.
